Optional:

- Add 2 Tbsp of poppyseed to bread.

- Add ½ cup of fresh raspberries or blueberries (washed and dried) to bread.

- Top with 1⁄4 cup sliced almonds and use almond extract instead of vanilla in bread.

Preheat oven to 350 degrees F (180 degrees C).

Grease and flour a 9x5 inch loaf pan or line it with parchment paper.

In a medium-sized bowl, sift together the All-Purpose Flour (1 1/2 cups), Baking Powder (1/2 tsp), Baking Soda (1 tsp), and Salt (1/4 tsp) and set aside. (dry mixture)

In a mixing bowl, add the Unsalted Butter (1/2 cup) and Truvia® Sweet Complete® Granulated All-Purpose Stevia Leaf Sweetener (3/4 cup) and then beat for 2-3 minutes until creamy Try to get it as fluffy as possible. (wet mixture)

To the wet mixture add Eggs (2) one at a time, mixing in between, and beat for 2 minutes or until fluffy.

In a third bowl combine Vanilla Extract (1 tsp), Lemon Juice (2 Tbsp), Lemon Zest (1), and Light Sour Cream (1/2 cup) and mix well (lemon mixture).

Now add half the lemon mixture to the wet mixture and beat for 2-3 minutes. Add in half of the dry mixture, mix well.

Add the rest of the lemon mixture, beat, then add the rest of the dry mixture until just mixed.

Spread the batter evenly into loaf pan.

Bake for 50-55 minutes or until golden brown.

Remove from oven and let cool in pan.

In a small bowl whisk together the Confectioners Sugar Replacement (1/3 cup), Lemon Juice (1 tsp), and Half and Half (1 tsp).

Spread on top of cooled bread. (or place into sandwich bag, cut corner and drizzle the icing on the bread).
