Combine the Ground Chicken (1 lb), Fresh Cilantro (1 Tbsp), Dijon Mustard (1 tsp), Ras el Hanout (1 tsp), Saffron Threads (1 pinch), Dried Onions (1/2 tsp), and Garlic Powder (1/2 tsp) in a large bowl and mix it all together thoroughly with clean hands. Press it into a single, even layer, then score it in half both vertically and horizontally to make four equal quarter pound portions.

Heat an electric griddle to 400 degrees F (200 degrees C) or a griddle pan over medium high heat. Form the four equal portions into patties and sear them for 5-6 minutes on each side to cook them completely.

Top the patties with a heaping spoonful of the Roasted Red Pepper Hummus (to taste) and a small handful of Fresh Baby Spinach (to taste). Serve them immediately with your favorite side! Serve and enjoy!
